I Googled “One Punch Man, Dorohedoro, Cowboy Bebop” and Reddit threads turned up Trigun, Chainsaw Man and Berserk as suggestions.

I’ll see how Bebop takes me. I should really watch Dorohedoro again though, it was idiosyncratic in the best way.
