Here's why - The ref blow for a free kick so play stopped so you can't book people for fouls after the game has stopped. Violent conduct, abusive language, etc Yes, but not this. I'll accept it because it was a bookable challenge but the game was stopped so it shouldn't count.
As for people getting booked while being on the subs bench, it's a joke whether it's Van Nistelrooy, Claudio Caniggia or anyone else who it's happened to. Nobody will be able to convince me why it makes sense to book people who aren't on the field.
