You pick two guys (one from Raw, one from Smackdown / 205 for WWE. For New Japan they are split into tiers) and if they lose a fall via pin, submission or stoppage they are eliminated from the game. There's also an activity timer so your guys have to keep working matches or they are eliminated after a period of inactivity (three weeks for WWE, six weeks for New Japan).

The game keeps going until there's only one person left and the winner gets an advantage for the following season.
