A lot of it has to do more with baseball history than anything specific.
The Dodgers and Giants were already big rivals before their move out West in the 1950s. Them staying as major rivals can be explained as them being the first teams in the West and the new fanbase mixing with original fans who also migrated to California.
Outside of Cubs-Cards, and White Sox-Cubs, all the other big name rivalries have their origins in the East.
